Who doesn’t love cookies? It’s a rhetorical question of course. What we don’t love is everything that comes with really good cookies. The calories, the sugar, the guilt and the extra pounds for a few bites of our favorite batch.
Why can’t someone just come up with a cookie recipe that only has a few ingredients and can be enjoyed without feeling like I failed myself? Here’s the thing, you haven’t failed yourself. You just need to learn how to change the ingredients in some of your favorite recipes so that staying on course with healthy eating is a snap.

Date Walnut Cookies

INGREDIENTS:
2 cup Walnuts
1 cup Dates
2 tbsp Agave or Date Syrup (optional)
1 pinch Ground Clove
1 pinch Sea Salt
DIRECTIONS:
Pulse a few times in the food processor on high into fine chunks
Measure cookies using a melon ball scoop for equal portions then form each cookie by hand
Dehydrate for 6 hours at 115 degrees in a dehydrator
Bake in an oven at 250 degrees for 8 minutes using a silicone baking mat on one side, flip each cookie and bake an additional 6 to 8 mins on the other side.
Once dehydrated or baked remove and allow to cool for about 15 mins. Cookies will harden slightly and may have a snap or crispy texture depending on how long they were heated and at what temperature.
I would go into how to store them but I won’t bother. They won’t be around long enough to be stored anywhere.
